Breakfast

Breakfast Parfait for Special Mothers

Use a large ice cream sundae glass. Put cornflakes (or your Mom's favorite breakfast cereal) in the bottom of the glass to about 1/3 full. Place a scoop of ice cream next and press down a bit so the ice cream is smooshed down in the glass. Put another layer of cornflakes and then another scoop of ice cream. Finish it off with chocolate syrup, caramel sauce, butter scotch sauce or fresh fruit.

Flower Pancakes

Arrange 6 prepackaged dollar size pancakes in the shape of a flower. Use one for the center and place the other 5 as petals around the center. Spread the center flower with yellow or orange jam or marmalade. Spread the petals with strawberry jam.

Toad in the Hole

Little ones will need adult supervision. Spray a large cupcake baking tin with nonstick cooking spray. Spread one slice of bread with butter for each serving. Gently tuck the bread into the muffin tin so it forms a cup shape. Crack an egg over a cup and then transfer the egg into the muffin tin. You crack the egg over the cup first in case in any shells fall in. They're easier to remove from the cup. Sprinkle each egg with a crushed slice of bacon. Buy precooked so you don't have to worry about grease spatters.

Place muffin tin in 350 degree oven and bake from 8 to 12 minutes depending on how hard you want the egg yolks to be. 8 minutes is runny, 12 minutes is almost hard. Remove the bread cups from the muffin tin. Serve with sliced fresh fruit from the deli counter and perhaps and extra slice of bacon or two.
