Easter Desserts for Kids

Ester recipes Flower cupcakes, use your favorite cup cake mix or batter. Follow directions for mix.

Line about 28 cupcake tins with cup cake liners, may make less or more cupcakes. Fill each one about halfway with batter. Take foil and roll up into balls about ½ to 2/3 inch in diameter. You need five foil balls for each cup cake. Place foil balls evenly around the outside of cup cake liner but on the inside of cupcake tin. Then bake. Cupcakes are only half full so cooking time is less. Mine took 15 minutes. Let cup cakes cool, then remove foil balls and remove cupcakes from cupcake tin.

Ester recipesFor icing I used food coloring to color vanilla icing. I cut the tops of the cupcakes off at the muffin liner edge so that the flowers wouldn't be so puffy. It makes them more like flowers instead of stars. I put the icing into pastry piping bags to have more control of the icing. For the centers I used sugar gum drops cut in half.

Jello egg jigglers. Purchase the egg molds and follow directions on Jello package.

Of course decorate sugar cookies in egg, flower, bunny or any Easter shape. Bake sugar cookies ready to bake from the refrigerator case. Cut outs is always a hit.

Sugar cookie shortcake
1 18oz refrigerated sugar cookies, chilled.
Or sugar cookies from the bakery section.
1 pound sliced strawberries
1 cup of milk
1 box vanilla instant pudding mix
3/4 cup whipping cream

Make cookies according to directions. Meanwhile, in a small bowl beat pudding mix and milk for 2 minutes until thickened. In another small bowl with an electric mixer, beat whipping cream until stiff peaks form. Fold whipped cream into pudding mixture. After cookies have cooled spread some pudding mixture onto cookie then put strawberries on top with more mixture. Place another cookie on top forming a cookie sandwich. Repeat until cookies are gone. Then top each cookie sandwich with more strawberries and pudding mixture. Serve in a bowl with a spoon.

Add fresh flowers to a regular cake or cupcakes.

Ester recipesButterfly Cupcakes: Use the same idea as the flower cup cakes except place a sweet and sour gummy worm in the center of the cup cake covering one "Petal" I used icing to make the eyes and any other detailed work.
